Chicken Soba Noodle Salad with Sesame Seed Dressing

Ingredients
NOODLE SALAD
- 1/2 capsicum, thinly sliced
- 1 carrot, grated
- 1 bundle soba noodles
- 1/2 cup frozen corn
- 1/2 pack baby spinach
CHICKEN
- 1 pack lean chicken breasts, sliced into 1-2cm strips
- 1 pack lime ponzu dressing
DRESSING
- 1/2 Tbsp sesame seeds
- 1 Tbsp soy sauce
- 1/2 Tbsp water
- 1/2 tsp grated ginger
- 1/2 pack peanut butter
TO SERVE
- 1/2 bunch coriander, chopped

Bring a pot of salted water to the boil.

Prep capsicum & carrot & cook noodles. Add noodles to pot of water, stir to separate and cook for about 2 minutes. After 2 minutes, add corn and continue to cook for 1-2 minutes. Drain, rinse under cold water and leave to drain well.

Prep & cook chicken. Pat chicken dry and slice into 1-2cm strips. Heat 1/2 tsp oil in a fry-pan on high heat, until very hot. Add chicken to pan and cook for about 5 minutes, turning, until almost cooked.

Reduce heat to medium and add lime ponzu dressing to pan. Continue to cook for 1-2 minutes, until chicken is cooked. Rest, covered and reserve any resting juices.

Prep dressing. In a large bowl, whisk together all dressing ingredients. Season with salt and pepper.

Finish noodle salad. Add soba noodles and corn to bowl with dressing, along with capsicum, carrot and spinach. Add resting juices from chicken to bowl, toss to coat and season with salt and pepper.

Prep coriander.

Serve noodle salad topped with chicken and coriander.
