Sage & Wagyu Beef Bolognese with Sicilian Pesto & Fresh Spaghetti

Ingredients
Bolognese
- 1/2 red onion, finely diced
- 1 clove garlic, thinly sliced
- 1 bunch sage, leaves picked
- 2g Bolognese spices
- 300g wagyu beef mince
- 400g chopped tomatoes
Pasta
- 1 courgette, peeled into ribbons
- 50g baby spinach, chopped
- 1 clove garlic, minced
- 150g spaghetti
To Serve
- 30g grated Parmesan cheese
- 40g Sicilian pesto
- 1 bunch basil, leaves picked

Bring a pot of salted water to the boil. Prep & cook Bolognese. Prep onion and garlic. Heat a drizzle of oil in a large fry-pan on medium-high heat. Add onion, garlic, 1/2 tsp salt and sage and cook for 2-3 minutes, until soft. Add Bolognese spices and beef and cook for about 3 minutes, breaking up meat as it cooks.

Add canned tomatoes and bring to a simmer. Simmer for about 5 minutes, until thick. Season to taste with salt and pepper and keep warm.

Prep & cook pasta. Prep courgette, spinach and garlic. Cook pasta in a large pot of boiling water for about 3 minutes, until tender. Add courgette and spinach, then drain immediately and set aside. Return pot to medium heat with a drizzle of oil and knob of butter. Add garlic and cook for 1 minute, then remove from heat and add pasta back to pot. Mix and season to taste with salt and pepper.

Serve pasta topped with Bolognese, Parmesan, Sicilian pesto and basil.
