Beef and Bean Chilli Wraps

Beef and bean chilli wraps served with apple, carrot and brussel sprout slaw


Ingredients

BEEF AND BEAN CHILLI

  • 1 tablespoon oil (e.g. canola, sunflower, peanut)
  • 1 brown onion, finely diced
  • 1/2 teaspoon salt
  • 600 g beef mince
  • 2 cloves garlic, minced
  • 1 tablespoon beef and bean chilli spice mix
  • 3 tablespoons chipotle sauce
  • 2 tablespoons tomato sauce
  • 3/4 cup beef stock
  • 1 can chopped tomatoes
  • 1 can kidney beans, drained and rinsed

APPLE CARROT AND BRUSSELS SPROUT SLAW

  • 200 g Brussels sprouts
  • 1 apple
  • 2 carrots
  • 3 tablespoons roughly chopped coriander
  • Juice of 1 lime

TO SERVE

  • 10 wholemeal wraps
  • 1/2 cup natural yoghurt
  • 1 tablespoon roughly chopped coriander

Steps

  1. oven to 150°C (to heat wraps). Alternatively, use microwave.
  2. Heat oil in a large fry-pan (preferably non-stick) on medium to high heat. Fry onion and salt for about 3 minutes, or until onion is soft. Add beef mince and cook until mince is browned, about 4 minutes, breaking up with a wooden spoon as it cooks. Add garlic and beef and bean chilli spice mix, cook for 1 minute then add chipotle sauce, tomato sauce, beef stock, tomatoes and kidney beans. Simmer for about 10 minutes until sauce has reduced.
  3. While chilli is cooking, prepare slaw; trim stalk end from Brussels sprouts, cut in half then very finely slice; remove core from apple, thinly slice and cut into matchsticks; peel and grate carrot; combine all in a medium bowl with coriander, lime juice and a drizzle of extra-virgin olive oil. Season with salt.
  4. Wrap stack of wraps in foil and warm in oven for 5 minutes. Alternatively, cover with cling film, and warm in microwave for about 50 seconds.
  5. Place everything on the table for everyone to assemble their own wraps. To make wraps, fill with beef and bean chilli, some slaw and a dollop of yoghurt. Garnish with extra coriander and roll up.
