Teriyaki Beef & Sesame Soba Noodles with Garlic Baby Bok Choy

Ingredients
Veggies
- 1 baby bok choy, leaves separated & cut in half lengthways
- 1 courgette, cut into 1cm thick rounds on an angle
- 2 cloves garlic, roughly chopped
- 1/2 Tbsp soy sauce
- 7g sesame seeds
Beef
- 1/2 red onion, finely diced
- 2 cloves garlic, roughly chopped
- 1 carrot, grated
- 300g beef mince
- 10g Japanese spices
- 1 Tbsp soy sauce
- 2 Tbsp teriyaki sauce
Noodles
- 160g noodles
To Serve
- 1 spring onion, thinly sliced
- Remaining teriyaki sauce

Bring a pot of salted water to the boil. Prep veggies. Prep bok choy, courgette, garlic, onion and carrot and set aside separately.

Prep & cook beef. Heat a fry-pan with a drizzle of oil on high heat. Cook onion and beef for about 5 minutes, until browned. Add second measure of garlic, first measure of carrot and Japanese spices to pan and cook for about 3 minutes, until beef is cooked through. Add second measure of soy sauce and first measure of teriyaki sauce. Season to taste and set aside, covered to keep warm. Reserve pan.

Cook veggies. Wipe pan clean and return to high heat with a drizzle of oil. Cook bok choy and courgette for about 3 minutes, until starting to brown. Add first measures of garlic and soy sauce and cook for about 2 minutes, until greens are tender. Sprinkle with sesame seeds.

Cook noodles & prep spring onion. Cook noodles in pot of boiling water for about 3 minutes, until tender. Drain and return to pot with a drizzle of sesame oil to prevent sticking. Set spring onion aside for serving.

Serve noodles topped with beef, veggies, remaining teriyaki sauce and spring onion.
