Southern Baked Chicken Drums with Mash & Gravy

Ingredients
Chicken
- 600g chicken drums
- 1 pack Southern chicken flour
- 1 Tbsp oil
Mash
- 400g potatoes, peeled & diced 2cm
- 1 carrot, diced 2cm
- 1/4 cup milk
Veggies
- 150g frozen corn
- 1 pack green beans
Gravy
- 1 pack gravy

Preheat oven to 220°C. Prep & cook chicken. Pat chicken dry and toss with Southern chicken flour, until well coated. Place on a lined oven tray in a single layer and brush with oil. Cook in oven for an initial 20 minutes. After 20 minutes, turn and cook for a further 20 minutes, until chicken is cooked through and golden.

Prep & make mash. Place potatoes and carrots in a pot with a pinch of salt and cover with hot tap water. Cook, covered, on high heat for about 20 minutes, until tender. Make sure potatoes are on a rolling boil. Drain and return to pot with milk and a knob of butter. Mash until smooth and season. Set aside covered to keep warm.

Cook veggies. When chicken has about 12 minutes cook time remaining, heat a drizzle of oil in a fry-pan on medium-high heat. Cook corn and green beans for 5-7 minutes, until tender and charred. Season, remove from pan and keep warm. Reserve pan.

Heat gravy. Return pan to low-medium heat. Add gravy and heat gently for 2-3 minutes, until hot through.

Serve chicken, mash and veggies with gravy.
