Mediterranean Braised Beef with Feta & Kumara Mash

Ingredients

Mash

  • 400g kumara, peeled & diced 3cm
  • 400g potatoes, peeled & diced
  • 1 carrot, diced 2cm
  • 1/4 cup milk
  • 1 Tbsp butter
  • 50g feta cheese, crumbled

Beef

  • 1/2 red onion, finely diced
  • 1 capsicum, finely diced
  • 1 pack braised beef spices
  • 1 pack sous vide Italian beef brisket
  • 1 courgette, diced 1cm
  • 400g chopped tomatoes
  • 1/2 cup hot water

To Serve

  • 1/2 pack garlic cream (optional, adults)

Steps

  1. Bring a pot of hot salted tap water to the boil with the lid on. Prep & cook mash. Add kumara, potatoes and carrot to a pot of boiling water and cook, on high heat with the lid on, for about 20 minutes, or until tender. Drain and return to pot with milk and butter. Mash until smooth, then add feta and whip through with a fork. Season to taste. Cover to keep warm. Leave feta out for fussier little foodies.
  2. Prep & start beef. Heat a drizzle of oil in a fry-pan (with a lid) on medium-high heat. Cook onion and capsicum for 4-5 minutes, until starting to soften. Add braised beef spices and cook, stirring for about 1 minute, until fragrant.
  3. Cook beef. Add beef (and any sauce in pack), courgette, canned tomatoes and hot water measure to pan with onion and capsicum and bring to a simmer. Reduce heat to low-medium and simmer, covered with a lid for 12-15 minutes, until beef is hot through. Remove lid and cook a further 2-3 minutes, until sauce has thickened and beef is tender.
  4. Finish beef. When beef is tender, use two forks to separate beef into bite sized pieces while in pan. Season to taste.
  5. Serve mash topped with beef and garlic cream. Leave garlic cream out for fussier little foodies.
