Beef Burrito Bowl with Sour Cream

Ingredients
Rice
- 1 1/2 cups jasmine rice
- 2 1/4 cups boiling water
Beef
- 1 brown onion, finely diced
- 1 pack beef mince
- 1 carrot, grated
- 1 pack burrito spices
- 1 can chopped tomatoes
- 1 cup water
- 1 Tbsp soy sauce
Sour Cream
- 125g sour cream
- 1 Tbsp sweet chilli sauce
To Serve
- 1/2 lettuce, shredded
- 1 tomato, diced
- 1 pack cheese, grated
- 1 pack chipotle sauce

Bring a full kettle to the boil. Cook rice. Combine rice, boiling water measure and a pinch of salt in a pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.

Prep & cook beef. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and beef for about 5 minutes, until starting to brown. Add carrot, burrito spices and 3/4 tsp salt and cook for 1 minute, until fragrant.

Add canned tomatoes, water measure and soy sauce. Bring to a simmer and cook for 4-5 minutes, until sauce has thickened. Season to taste.

Prep sour cream & garnishes. In a bowl, mix sour cream with sweet chilli sauce. Set lettuce, tomato and cheese aside to serve.

Serve rice topped with beef, lettuce, tomato, cheese, sour cream and chipotle sauce.
