Italian Sausage and Bean Pie with Crispy Potato Top

Italian sausage and bean pie flavoured with rosemary, thyme and paprika with crispy potato top


Ingredients

ITALIAN SAUSAGE AND BEAN PIE

  • 2 tablespoons olive oil
  • 1 red onion, thinly sliced
  • 2 cloves garlic, finely chopped
  • 450g Italian sausage grind
  • 1 tablespoon finely chopped rosemary
  • 1 tablespoon finely chopped thyme
  • 1 teaspoon smoked paprika
  • 1 carrot, grated
  • 1 can cherry tomatoes
  • 1 can butterbeans (not drained)

CRISPY POTATO TOP

  • 400g agria potatoes, peeled and sliced into 2–3mm rounds
  • 2 tablespoons melted butter
  • 2 tablespoons finely chopped rosemary
  • 2 teaspoons finely chopped thyme
  • 1 head broccoli, to serve

Steps

  1. oven to 220°C.
  2. Heat olive oil in a large fry-pan on medium heat. Fry onion, garlic and Italian sausage grind, breaking meat up with a wooden spoon as it cooks, for about 5 minutes until browned. Add herbs, paprika and carrot and cook a further 1 minute.
  3. Add tomatoes, beans (including liquid) and simmer about 4 minutes, until sauce has thickened slightly. Season to taste with salt and pepper.
  4. While sausage and beans simmer, prepare topping; in a medium bowl toss sliced potato, melted butter and herbs together until well combined and season with salt.
  5. Transfer sausage bean mixture to a medium oven dish (approximately 23x23cm). Arrange potato slices on top, overlapping, in rows. Bake for 25 minutes until potato is cooked through. Finish under grill for about 2 minutes until top is golden and crispy.
  6. When pie has 10 minutes cook time remaining; bring a medium pot of salted water to the boil. Cut broccoli into florets and cook for 2–3 minutes until just tender. Drain.
  7. Serve Italian sausage and bean pie onto plates with broccoli on the side.
