Ingredients
KUMARA CHIPS
- 100g kumara, cut into chips
SALSA
- 1/4 pack cherry tomatoes, diced 1cm
- 1/8 red onion, finely diced
- 1 bunch parsley, finely chopped
- 1/4 tsp vinegar
- Pinch of chilli flakes (optional)
FISH
- 1 pack market fish
- 1/2 Tbsp flour
- 1/2 egg, beaten
- 1 pack wholemeal breadcrumbs
TO SERVE
- 1 lettuce, leaves separated
- 1/4 pack rocket
- 1 pack yoghurt tartare
- 1/2 lemon, cut into wedges

Preheat oven to 220°C.

Prep & cook kumara chips. Toss kumara chips on a lined oven tray with 1/4 tsp oil. Season and roast in oven for about 25 minutes, until tender and golden.

Prep salsa. Combine all salsa ingredients in a bowl with a pinch of salt.

Prep fish. Pat fish dry and remove any scales or bones. Cut larger fillets in half and season. Add to a bowl along with flour and toss to coat. Add egg to the same bowl and toss to coat fish. Place breadcrumbs in another bowl. Add fish to crumbs, turn to coat each piece well.

Cook fish. When the kumara chips have about 8 minutes cook time remaining, remove tray from oven and push chips to one side of tray. Place fish on tray and drizzle with 1/2 tsp oil. Return tray to oven and cook for about 8 minutes, until cooked through and golden.

Prep serving ingredients.

Serve lettuce leaves filled with fish, rocket, salsa and yoghurt tartare. Serve lemon wedges and kumara chips on the side.
