Cajun Fish with Kumara Mash & Hollandaise

Ingredients
Mash
- 800g kumara, peeled & diced 2cm
- 2 carrots, diced 1cm
- 1/3 cup milk
Corn
- 2 corn cobs, each cut into 3 pieces
- 1 Tbsp butter
Fish
- 1 pack market fish
- 1 pack Cajun spices
To Serve
- 1 pack Cajun Hollandaise

Bring a large pot of hot salted tap water to the boil with a lid. Prep & cook mash. Add kumara and carrots to pot of boiling water. Cook for about 20 minutes, or until very soft. Drain well, then mash with milk and a knob of butter. Season to taste.

Prep & cook corn. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook corn for 8-10 minutes, turning frequently, until golden and tender. Toss in butter, remove from heat and keep warm. Reserve pan.

Prep & cook fish. Pat fish dry and cut any larger fillets in half. Toss with Cajun spices and a drizzle of oil and season with salt. Return pan to medium-high heat with a drizzle of oil. Cook fish for 1-3 minutes each side (depending on thickness), or until golden and just cooked through.

Serve mash with fish, corn and Cajun Hollandaise.
