Beef & Beetroot Burger with Corn

Ingredients
Patties
- 1 carrot, grated
- 1 pack beef mince
- 1 pack burger spice mix
- 1/4 cup panko breadcrumbs
- 1 egg yolk
Buns & Fillings
- 1/2 pack beetroot, sliced
- 1 tomato, sliced
- 2 slices cheese
- 1 lettuce, leaves separated
- 1 pack sesame burger buns, cut in half
- 2 Tbsp mayo
Corn
- 2 corn cobs, cut in half
- 1/2 Tbsp butter, optional

Preheat oven to 200°C (if using). Preheat BBQ to medium heat (if using). Bring a full kettle to the boil. Make patties. In a bowl, combine patty ingredients with 1/2 tsp salt. Season with pepper. Shape mixture into 2 patties using a 1/2 cup measure.

Prep fillings. Set aside veggies and cheese separately.

Prep & cook corn. Place corn and a pinch of salt in a heat-proof bowl. Cover with boiling water, cover and leave to cook for about 10 minutes or until tender. Drain, add butter to bowl, toss to coat and season to taste.

Cook patties. Heat a drizzle of oil in a fry-pan (preferably non-stick) on medium heat. Cook patties for about 6 minutes each side, until just cooked through. Place cheese on top of patties and cook for about 2 minutes, with a lid on, until cheese has melted. Alternatively, do this on the BBQ.

Heat buns. Place burger buns on an oven tray and warm in oven for 2-3 minutes. Alternatively, toast on the BBQ.

Serve buns filled with patties, veggies, cheese and mayo. Serve corn on the side.
