Prawn Burrito Bowl with Chipotle Sour Cream & Lime

Ingredients

BURRITO BOWL

  • 1/2 can black beans, drained & rinsed
  • 1/2 pack cherry tomatoes, halved
  • 1/2 capsicum, thinly sliced
  • 1 baby cos lettuce, shredded
  • 1/4 red onion, thinly sliced

CHIPOTLE SOUR CREAM

  • 1/2-1 pack chipotle sauce
  • 2 Tbsp lite sour cream

PRAWNS

  • 1 pack frozen prawns, defrosted
  • 1 corn cob, kernels removed
  • 1 pack burrito spices

TO SERVE

  • 1 pack sunflower & pumpkin seeds
  • 1/2 bunch coriander, leaves picked
  • 1/2 lime, cut into wedges

Steps

  1. Prep burrito bowl ingredients. Set all burrito bowl ingredients aside separately for serving. Season black beans with salt to taste.
  2. Make chipotle sour cream. In a small bowl, combine chipotle sauce and sour cream. Season to taste.
  3. Prep & cook prawns & corn. In a bowl, toss prawns with burrito spices and a pinch of salt. Heat 1 tsp oil in a fry-pan on high heat. Stir-fry prawns for about 2 minutes, until golden. Add corn to pan and stir-fry for a further 2-3 minutes, until prawns and corn are golden and tender.
  4. Prep garnishes.
  5. Serve burrito bowl ingredients topped with prawns and corn, chipotle sour cream, seeds and coriander. Serve lime wedges on the side.
