Bahn Mi Chicken Noodle Bowls

Ingredients
Patties
- 1 pack chicken mince
- 1 Tbsp minced ginger
- 1 Tbsp fish sauce
- 1 clove garlic, minced
- 1 Tbsp flour
- 1 Tbsp sweet chilli sauce
- 2 tsp soy sauce
Noodles & Veggies
- 1 broccoli, roughly chopped
- 1/4 cabbage, thinly sliced, 1 1/2 cups worth
- 1 carrot, cut into thin sticks or grated
- 1/2 telegraph cucumber, sliced into rounds
- 3 packs udon noodles
- 1 pack noodle dressing
To Serve
- 1 pack bahn mi sauce
- 1 pack crispy shallots

Preheat BBQ hot plate to medium (if using). Bring a medium pot of hot tap water to the boil with a lid. Prep patties. In a large bowl, combine all patty ingredients together. Set aside.

Prep veggies. Set aside.

Cook broccoli. Add broccoli to pot of boiling water and cook for 3-5 minutes, or until just tender. Drain, refresh under cold water and leave to drain.

Cook patties. Heat a drizzle of oil in a large fry-pan on medium heat. Using a 1/4 cup measure, scoop chicken mixture straight into pan and cook for 3-4 minutes each side, until golden and cooked through. Cover to rest. Alternatively, do this on the BBQ hot plate.

Meanwhile, cook noodles. Bring a full kettle to the boil. Add noodles to a heat-proof bowl. Pour boiling water over noodles and leave for about 2 minutes, until tender. Rinse under cold water, then drain well. Return to bowl and toss with cooked broccoli, cabbage, carrot, cucumber and noodle dressing. Season to taste. Keep veggies separate from noodles and sauce for fussier little foodies.

Serve noodles and veggies topped with patties, bahn mi sauce and crispy shallots.
