Cream Cheese & Mushroom Pizza with Salad

Ingredients
Pizza
- 1 red onion, thinly sliced
- 1 pack button mushrooms, sliced
- 150g cream cheese
- 2 Tbsp basil pesto
- 70g tomato paste
- 2 Tbsp sweet chilli sauce
- 3 pizza bases
- 1 block cheese, grated
Salad
- 1 Tbsp sweet chilli sauce
- 2 tsp mustard
- 1/2 lettuce, roughly chopped
- 2 tomatoes, diced
- 1/2 telegraph cucumber, diced
- 1 carrot, peeled into ribbons
To Serve
- Remaining basil pesto

Preheat oven to 220°C. Preheat two oven trays. Prep veggies & make pizza. In a bowl, combine cream cheese and first measure of basil pesto. In a separate bowl, mix tomato paste and first measure of sweet chilli sauce. Divide tomato paste mixture between bases, spread evenly to cover and sprinkle with cheese.

Sprinkle red onion and mushrooms evenly over pizzas and dollop with pesto cream cheese. Season. Cut one pizza in half.

Cook pizza. Transfer 1 1/2 pizzas to each preheated tray and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Prep salad. In a large bowl, whisk together second measure of sweet chilli sauce, mustard and a drizzle of olive oil. Add lettuce, tomatoes, cucumber and carrot and toss to combine. Cut cucumber and carrot into sticks for fussier little foodies and keep separate.

Serve slices of pizza drizzled with remaining basil pesto and salad on the side.
