Beef Nasi Goreng with Sesame Sauce

Ingredients
Rice
- 3/4 cup jasmine rice
- 1 cup boiling water
- 3/4 Tbsp soy sauce
Veggies
- 1/2 capsicum, diced
- 1/2 broccoli, cut into small florets
- 1 carrot, grated
Eggs
- 2 eggs
- 1 spring onion, thinly sliced
- 1/2 pack sesame seeds
Beef
- 1 pack beef mince
- 1 pack nasi goreng spices
- 1/2 Tbsp grated ginger
- 2 cloves garlic, minced
To Serve
- 2 Tbsp sesame sauce
- Pinch of garlic chilli blend (optional, spicy)

Bring a full kettle to the boil. Cook rice & prep veggies. Combine rice, boiling water measure and a pinch of salt in a pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking. Set veggies aside.

Prep & cook eggs. Whisk eggs in a bowl with spring onion and sesame seeds. Season. Heat a drizzle of oil in a non-stick fry-pan or wok on medium-high heat. Pour in egg mixture and cook for about 4 minutes, until set. Set egg aside and keep pan on medium-high heat.

Cook beef. Heat a drizzle of oil in same pan, and cook beef for about 4 minutes, until browned. Add nasi goreng spices, ginger, garlic and a pinch of salt and cook a further 2 minutes, until beef is cooked through. Remove beef from pan and set aside in a bowl. Reserve pan.

Cook veggies. Return reserved pan to medium-high heat and add a drizzle of oil. Cook capsicum, broccoli and carrot with a splash of water for about 5 minutes, until tender. Set veggies aside with beef and keep pan on mediumhigh heat.

Finish rice. Heat a drizzle of sesame oil in pan and add cooked rice. Cook for 3 minutes, stirring often and scraping bottom of pan. Add soy sauce and stir to combine. Return beef and veggies to pan and cook about 1 minute, until heated through. Season to taste with soy sauce. Thinly slice egg.

Serve nasi goreng topped with egg, sesame sauce and garlic chilli blend.
