Greek Falafel Mezze Plates with Hummus, Bulgur Pilaf & Olives

Ingredients

Bulgur

  • 1 red onion, thinly sliced
  • 2 Tbsp sumac pistachio blend
  • 1 cup bulgur wheat
  • 2 1/2 cups vegetable stock

Falafel

  • 1 pack falafel mix
  • 2 tsp sumac pistachio blend

Garnishes

  • 1/3 pack mixed baby leaf lettuce
  • 1 punnet mixed tomatoes, smaller ones halved & larger ones sliced into wedges
  • 1 Lebanese cucumber, thinly sliced into rounds
  • 1 pack olives
  • 1 pack hummus
  • 1/2 - 1 pack tzatziki
  • 1 bunch mint, leaves picked

Steps

  1. Prep & cook bulgur. Heat a drizzle of oil in a pot on medium-high heat. Cook onion for 2-3 minutes, until softened. Add first measure of sumac pistachio blend and cook for 1 minute, until fragrant. Add bulgur, stock and 1/2 tsp salt and bring to a simmer. Once simmering, reduce heat to low and cook, covered, for 10 minutes. Remove from heat and leave to steam, covered, for about 5 minutes.
  2. Prep garnishes. Set aside to serve.
  3. Cook falafel. Heat a drizzle of oil in a non-stick fry-pan on medium-high heat. Add falafel mix to pan and break up with a wooden spoon. Cook falafel for 6-8 minutes, until you have a golden crumbly mixture. Add second measure of sumac pistachio blend and a pinch of salt and cook a further minute, until fragrant. Season to taste.
  4. Finish bulgur. Fluff bulgur with a fork and season to taste.
  5. Serve bulgur and falafel topped with garnishes.
