Crispy Pork Dumplings with Asian Greens & Mum’s Sauce

Ingredients

Dumplings

  • 2 packs pork dumplings
  • 1/2 cup water

Greens

  • 1 bunch broccolini, ends trimmed & cut in quarters lengthways
  • 1 pack green beans
  • 1 pack oyster sauce
  • 1/2 pack peanuts

Salad

  • 1 telegraph cucumber, thinly sliced
  • 1 pack toasted sesame seeds
  • 1 pack black vinegar

To Dip

  • 1 pack Mum’s sauce
  • 1 pack chilli oil

Steps

  1. Cook dumplings. Heat a drizzle of oil in a fry-pan (with a lid) on medium-high heat. Cook dumplings, flat side down for about 3 minutes, until golden and crispy. Add water measure to pan and cover with lid. Cook for 2 minutes. Remove lid and cook for a further 1-2 minutes, until dumplings are hot through and any remaining water has evaporated.
  2. Prep salad. Toss cucumber with sesame seeds, black vinegar, a drizzle of sesame oil and a pinch of salt. Leave to pickle.
  3. Prep & cook greens. Heat a little oil in a second fry-pan on high heat. Cook broccolini for 6-8 minutes, or until tender. Toss with oyster sauce and sprinkle with peanuts.
  4. Serve dumplings with greens, salad, Mum’s sauce and chilli oil.
