Garlic Prawn Pasta with Cherry Tomatoes

Ingredients
Pasta
- 1/2 pack linguine
Prawns
- 1 pack frozen prawns, defrosted
- 2 cloves garlic, roughly chopped
- 1/2 tsp garlic chilli blend (optional)
- 1 punnet cherry tomatoes
- 1/2 cup chicken stock
- 2 Tbsp butter
- Juice of 1/2 lemon
- 1/2 pack baby spinach
To Serve
- 1/2 lemon, cut into wedges

Bring a pot of salted water to the boil. Cook pasta. Cook pasta in boiling water for about 12 minutes or until tender. Drain and return to pot with a drizzle of oil to prevent sticking.

Prep & cook prawns. Pat prawns dry and season. Heat a drizzle of oil in a fry-pan on high heat. Cook prawns, garlic and garlic chilli blend with 1/2 tsp salt about 3 minutes, until starting to brown. Add cherry tomatoes and stock and cook for about 3 minutes, until cherry tomatoes soften. Season to taste.

To finish. Add butter, lemon juice and spinach to prawns, stir to combine and season to taste. Fold prawns through pasta. Prep lemon.

Serve pasta and prawns with a lemon wedge.
