Char Siu Pork

Ingredients

Rice

  • 1 1/2 cups brown rice
  • 2 1/4 cups water

Pork

  • 1 pack pork rump steaks
  • 2/3 pack char siu glaze
  • Remaining char siu glaze

Veggies

  • 1 carrot, cut in half lengthways & thinly sliced
  • 1 baby bok choy, thinly sliced
  • 1 broccoli, cut into small florets
  • 1/2 pack stir-fry sauce

To Serve

  • Remaining stir-fry sauce
  • 1 pack chopped peanuts

Steps

  1. Preheat BBQ hot plate to medium (if using). Bring a full kettle to the boil. Cook rice. Place rice, water measure and a pinch of salt in a pot, cover and bring to the boil. When boiling, reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.
  2. Prep pork & veggies. Pat pork dry, then place in a bowl with first measure of char siu glaze and season. Leave to marinate while you prep veggies.
  3. Cook pork. Heat a drizzle of oil in a fry-pan on medium heat. Cook pork for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, do this on the BBQ. Set pork aside, pour over remaining char siu glaze and cover to rest. Reserve pan.
  4. Cook veggies. Wipe out reserved pan and return to high heat with a drizzle of oil. Stir-fry carrot, bok choy and broccoli for 3-4 minutes, until tender. Add first measure of stir-fry sauce and toss to combine.
  5. To finish. Slice pork thickly against the grain and toss back through resting juices/glaze.
  6. Serve rice, pork and veggies with remaining stir-fry sauce and peanuts.
