Lebanese Jewelled Beef with Hummus & Pomegranate Dressing

Ingredients

Beef

  • 1 pack beef mince
  • 1 pack Lebanese spices

To Serve

  • 2 packs brown & wild rice
  • 1 telegraph cucumber, diced
  • 2 tomatoes, diced
  • 1 pack pomegranate dressing
  • 4 Tbsp hummus
  • 4 Tbsp yoghurt
  • Pomegranate arils
  • 1 mint & parsley pack, leaves picked
  • 1 pack almonds

Steps

  1. Cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook beef for about 6 minutes, stirring, until browned. Add Lebanese spices and cook, stirring for about 1 minute, until fragrant.
  2. Heat rice. Squeeze rice in packs to separate grains, tear open tops and heat rice in microwave for 2-3 minutes, until hot.
  3. Prep cucumber & tomatoes.
  4. Serve rice topped with beef, cucumber, tomatoes, pomegranate dressing, hummus, yoghurt, pomegranate arils, herbs and almonds.
