Lebanese Jewelled Beef with Hummus & Pomegranate Dressing

Ingredients

Beef

  • 1 pack beef mince
  • 1 pack Lebanese spices

To Serve

  • 1 pack rice
  • 1 Lebanese cucumber, diced
  • 1 tomato, diced
  • 1 pack pomegranate dressing
  • 2 Tbsp hummus
  • 2 Tbsp yoghurt
  • 1 pack pomegranate arils
  • 1 pack mint & parsley, leaves picked
  • 2 Tbsp almonds

Steps

  1. Cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook beef for about 6 minutes, stirring, until browned. Add Lebanese spices and cook, stirring, for about 1 minute, until fragrant.
  2. Heat rice. Squeeze rice in pack to separate grains, tear open top and heat rice in microwave for 1-2 minutes, until hot.
  3. Prep cucumber & tomato.
  4. Serve rice topped with beef, cucumber, tomato, pomegranate dressing, hummus, yoghurt, pomegranate arils, herbs and almonds.
