Bacon Fettuccine with Mushrooms & Porcini Cream

Ingredients
Sauce
- 1 pack bacon, chopped
- 2 packs sliced mushrooms
- 1 pack garlic paste
- 1 pack porcini cream
- 1/2 pack grated Parmesan cheese
- Juice of 1 lemon
- 1/4 cup warm water
Pasta
- 1 pack broccolini, cut into thirds
- 1 pack fettuccine
To Serve
- 1/2 pack grated Parmesan cheese
- Basil
- 1 Tbsp walnuts

Before you start, bring a pot of salted water to the boil (using hot tap water, with the lid on). Prep bacon & broccolini.

Cook bacon & sauce. Heat a drizzle of oil in a large fry-pan on high heat. Cook bacon for about 3 minutes, stirring, until golden. Add mushrooms and garlic paste and stir-fry for 3-4 minutes, until mushrooms are cooked. Remove from heat and stir through porcini cream, first measure of Parmesan, lemon juice and warm water. Add a little more water if sauce is too thick. Season.

Meanwhile, cook pasta & broccolini. Use hands to separate pasta. Cook broccolini and pasta in pot of boiling water for 2-3 minutes, until just tender. Drain well and return to pot with a drizzle of olive oil.

Serve pasta and broccolini topped with sauce, Parmesan, basil and walnuts.
