Mexican Beef & Bean Burritos

Ingredients
Beef
- 1 pack beef mince
- 1/2 brown onion, finely diced
- 1 carrot, grated
- 1 clove garlic, minced
- 1 pack Mexican spices
- 1/2 can chopped tomatoes
- 1/2 can mild chilli beans
- 1 tsp sweet chilli sauce
Salsa
- 1 tomato, finely diced
- 1/2 telegraph cucumber, finely diced
- 1 Tbsp Mexican dressing
To Serve
- 4 tortillas
- 1/4 cup cheese, grated
- 2 Tbsp sour cream
- Pinch of garlic chilli blend

Preheat oven to 180°C, (if using for wraps). Alternatively, heat wraps in microwave. Prep & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook beef for 3-4 minutes, until browned. Add onion, carrot and garlic and cook a further 2 minutes.

Add Mexican spices and 1/2 tsp salt to pan and cook for 2 minutes, until fragrant. Add canned tomatoes, beans and sweet chilli sauce and bring to a simmer. Reduce heat to medium and simmer for about 10 minutes, until thickened.

Prep salsa. Combine salsa ingredients in a bowl and season to taste.

Heat tortilla. Wrap stack of tortillas in foil and bake in oven for about 10 minutes or until heated through. Alternatively, wrap in a damp tea towel and heat in microwave for 1-2 minutes.

Serve tortillas filled with beef and beans, topped with salsa, cheese, sour cream and garlic chilli blend.
