Bacon, Potato & Avocado Caesar Salad

Ingredients

Potates

  • 800g potatoes, diced
  • 1 pack bacon, sliced 2cm
  • 1 pack Caesar herbs
  • 1/2 pack grated Parmesan cheese

Eggs

  • 4 eggs

Salad

  • 1 cos lettuce, roughly chopped
  • 2 tomatoes, diced
  • 1 avocado, sliced
  • Remaining grated Parmesan cheese
  • 1/2 pack Caesar dressing

To Serve

  • Remaining Caesar dressing

Steps

  1. Preheat oven to 220°C. Prep & cook potatoes. Toss potatoes, bacon, Caesar herbs and a drizzle of oil on a lined oven tray. Roast for 20 minutes to start with.
  2. Cook eggs. Place eggs in a pot and cover with water. Bring to the boil, reduce to a simmer and cook for 3-4 minutes for soft-boiled and 4-6 minutes for hard-boiled. Drain and cool under cold running water. Peel and cut into quarters.
  3. Prep salad. In a large bowl, combine lettuce, tomatoes, avocado, second measure of Parmesan cheese and first measure of Caesar dressing.
  4. Finish potatoes. After 20 minutes of cook time, add first measure of Parmesan cheese to tray with potatoes and bacon and cook a further 10 minutes, until bacon is crispy and cheese has melted.
  5. Serve potatoes, bacon, salad and eggs with remaining Caesar dressing.
