Beef & Pork Lettuce Burgers with Sumac Eggs & Feta Whip

Ingredients
SALAD
- 1 carrot, grated
- 1/2 courgette, grated
- 1/2 capsicum, thinly sliced
- 1/4 tsp sumac spices
- 1 tsp vinegar
PATTIES
- 1 pack lean ground beef & pork
- 1 pack burger spices
FETA WHIP
- 25g feta cheese, crumbled
- 1/4 cup yoghurt
SUMAC EGGS
- 2 eggs
- Remaining sumac spices
TO SERVE
- 2 tomatoes, thinly sliced
- 1/2 iceberg lettuce, seperated into cups

Preheat oven to high grill. Preheat BBQ hot plate to medium (if using).

Prep salad. Add all salad ingredients to a bowl along with a pinch of salt. Toss well to combine.

Prep patties. Mix all patty ingredients together in a bowl with 1/2 tsp salt. Shape into 2 equal-sized patties, about 2cm thick.

Cook patties. Place patties on a lined oven tray, brush with 1/2 tsp oil and grill for about 12 minutes, or until cooked through. Alternatively, do this on the BBQ hot plate, turning every 2 minutes for about 12 minutes.

Prep feta whip. Whisk together feta and yoghurt in a bowl.

Prep tomatoes & lettuce.

Cook sumac eggs. Heat 1 tsp oil in a non-stick frypan on medium heat. Cook eggs for 3-4 minutes (flipping halfway if desired). Sprinkle with a pinch of sumac spice and season. Alternatively, do this on the BBQ hot plate.

Serve patties inside lettuce cups. Top with tomato, salad, a sumac egg and feta whip. Serve remaining salad and lettuce on the side.
