
Beef Steak with Chips, Béarnaise & Charred Broccoli

Ingredients
Chips
- 800g potatoes, cut into chips
- 1 carrot, cut into chips
- 1 parnsip, cut into chips
- 1 pack chip seasoning
Beef
- 1 pack rump steak
Broccoli
- 1 broccoli, cut into small florets
- Juice of 1/2 lemon
To Serve
- 1 pack Béarnaise sauce

Preheat oven to 230°C. Preheat BBQ hot plate to medium-high (if using). Prep & cook chips. Toss potatoes, carrots and parsnip with chip seasoning and a drizzle of oil on a lined oven tray. Cook for about 25 minutes, or until golden and tender.

Cook beef. Pat beef dry and season. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook beef for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered before thickly slicing against the grain. Toss back through any resting juices. Reserve pan. Alternatively, do this on the BBQ.

Prep & cook broccoli. Return reserved pan back to medium-high heat with a drizzle of oil. Cook broccoli for 3-5 minutes, until charred. Season, remove from heat and squeeze over lemon juice. Alternatively, do this on the BBQ.

Serve beef, chips & broccoli with Béarnaise sauce.
