Ham & Cheese Crustless Quiche

Ingredients

Quiche

  • 6 eggs
  • 1/4 cup milk
  • 1 cup cream
  • 3/4 cup GF flour
  • 1 1/2 tsp GF baking powder
  • 1/2 red onion, finely diced
  • 1 courgette, grated
  • 200g ham, roughly chopped
  • 250g frozen corn
  • 1 pack grated Parmesan cheese

Salad

  • 1 apple, thinly sliced
  • 1 lettuce, roughly torn

To Serve

  • 1 pack tomato chutney

Steps

  1. Preheat oven to 200°C. Grease a baking dish about 20x30cm. Prep quiche ingredients.
  2. Make egg mix. Whisk eggs in a bowl with milk, cream and 1/2 tsp salt. Sift flour and baking powder into a second bowl. Slowly whisk egg/cream mix into flour a little at a time, until smooth. Add onion, courgette, ham, corn and cheese and mix until combined. Season with pepper.
  3. Cook quiche. Pour egg mix into greased dish and bake for about 35 minutes, until golden and egg is set.
  4. Prep salad. Just before serving, toss apple and lettuce in a bowl with a drizzle of olive oil and vinegar. Season to taste.
  5. Serve quiche with salad and tomato chutney.
