Indian Spiced Lamb Kofta with Mango Lime Yoghurt

Ingredients

BASMATI SALAD

  • 1 pack brown basmati rice
  • 1/2 telegraph cucumber, peeled into ribbons
  • 1/2 pack baby spinach
  • 1 tomato, finely diced

LAMB KOFTA

  • 1 pack lean ground lamb
  • 1 pack Indian spices
  • 1 courgette, grated

TO SERVE

  • 1 pack mango lime yoghurt
  • 2 radishes, thinly sliced
  • 1 bunch mint, leaves picked
  • 1/2 bunch coriander, leaves picked

Steps

  1. Bring a pot of salted water to the boil. Preheat BBQ to medium-high (if using).
  2. Cook rice & prep salad veggies. Cook rice in pot of boiling water for 20-25 minutes, until tender. Drain and toss in a bowl with remaining salad ingredients just before serving. Season to taste.
  3. Prep kofta. Combine lamb kofta ingredients together in a bowl with 1 tsp salt. Measure out 1/4 cup amounts of mixture and use clean hands to shape into rugby ball shapes.
  4. Cook kofta. Heat 1 tsp oil in a fry-pan on medium heat. Cook kofta for about 10 minutes, turning often, until golden and cooked through. Rest, covered. Alternatively, do this on the BBQ.
  5. Prep garnishes.
  6. Serve basmati salad topped with kofta, mango lime yoghurt, radish, mint and coriander.
