
BBQ Beef Brisket Pizza with Ranch Swirl

Ingredients
Pizza
- 1 pack BBQ beef brisket
- 1 pack BBQ sauce
- 4 pizza bases
- 1/2 pack grated 3 cheese mix
- 1/2 red onion, thinly sliced
- 1/2 pack roasted red capsicum, thinly sliced
- 1/2 bunch parsley, leaves picked
- 4 Tbsp ranch dressing
Salad
- 1 baby cos lettuce, leaves separated
- 1/2 cucumber, thinly sliced into rounds
- 1 apple, thinly sliced
- 2 Tbsp ranch dressing

Preheat oven to 220°C. Preheat two oven trays. Prep brisket. Remove beef from pack and place on a board. Pour any remaining sauce from pack into a bowl. Thinly slice beef and add to sauce along with BBQ sauce. Mix together with a fork, breaking beef up as you go. Season.

Prep bases & toppings. Drizzle each base with oil and sprinkle with a little cheese. Evenly divide beef and sauce over each base. Top with onion, roasted capsicum and remaining cheese.

Cook pizzas. Place two pizzas on each tray and cook for 12-14 minutes, until the bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Make salad. Fill lettuce leaves with cucumber and apple, season and drizzle with second measure of ranch dressing, reserving remaining for the pizzas.

To finish. Prep parsley. When pizzas are cooked, drizzle with ranch dressing and sprinkle with parsley.

Serve slices of pizza with salad on the side.
