Beef Fried Rice with Crispy Shallots

Ingredients
Veggies
- 1 baby bok choy, thinly sliced
- 1 broccoli, cut into small florets
- 1 carrot, grated
Beef
- 1 pack beef mince
- 1 pack fried rice spices
- 1 Tbsp finely grated ginger
- 1 clove garlic, minced
Rice
- 2 packs pre-cooked rice
- 2 Tbsp sesame oil
- 2 Tbsp soy sauce
To Serve
- 1 pack crispy shallots
- 1 pack honey soy ginger sauce
- Pinch chilli garlic blend (optional adults)

Prep veggies.

Cook beef. Heat a drizzle of oil in a non-stick fry-pan or wok on medium-high heat. Cook beef for about 4 minutes, until browned. Add fried rice spices, ginger and garlic and cook a further 2 minutes, until fragrant. Season to taste. Remove beef from pan and set aside in a large bowl. Reserve pan.

Cook rice. Return reserved pan to medium-high heat with a drizzle of oil. Cook rice, stirring as it cooks for 3-5 minutes until hot and starting to colour. Stir through soy sauce and sesame oil, then transfer to bowl with beef. Keep pan on heat.

Cook veggies. Add a drizzle of oil to pan. Add white part of bok choy, broccoli, carrot and a splash of water to pan and cook for 3 minutes, until tender. Stir though green part of bok choy.

To finish. Return cooked beef and rice to pan with veggies and cook about 1 minute, until heated through.

Serve beef fried rice topped with crispy shallots, honey soy ginger sauce, and garlic chilli blend.
