Beef Sirloin Steaks with Pumpkin & Creamy Mushrooms

Ingredients
Pumpkin
- 1 pack diced pumpkin
- 1 pack pumpkin herbs
- 1 pack pumpkin seeds
Beef
- 1 pack beef sirloin steaks
Mushrooms
- 2 packs sliced mushrooms
- 1 pack lite sour cream
To Serve
- 1 pack baby spinach

Before you start, preheat oven to fan bake 230°C. Preheat BBQ to high (if using).

Roast pumpkin. Toss pumpkin, pumpkin herbs and pumpkin seeds on a lined oven tray with a drizzle of oil. Season and roast (on middle oven rack) for 15 minutes, until cooked.

Meanwhile, cook beef. Heat a drizzle of oil in a fry-pan on high heat. Pat beef dry, season and cook for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Remove from pan and wrap in foil to rest. Keep pan on heat. Alternatively, do this on the BBQ.

Cook mushrooms. Heat a drizzle of oil in reserved pan. Cook mushrooms with a pinch of salt, stirring for 3-4 minutes, until softened. Add a splash of water to remove any pan brownings. Reduce heat to medium, stir through sour cream and any beef resting juices. Remove from heat and season.

Serve spinach topped with pumpkin, beef and mushrooms.
