Haloumi & Kumara Fritters with Avocado Salsa & Mango Drizzle

Ingredients
Fritters
- 2 eggs
- 1/4 cup milk
- 1 pack fritter spices
- 1/4 cup flour
- 1/4 tsp baking powder
- 200g kumara, grated
- 1 pack haloumi cheese, grated
- 1 brown onion, thinly sliced
Salsa
- 1/2 telegraph cucumber, diced 1 cm
- 1/2 avocado, diced 1cm
- 1 capsicum, diced 1cm
- 1 bunch basil, picked
Mango Drizzle
- 2-3 Tbsp mango chilli sauce
- 3 Tbsp mayonnaise

Prep fritters. In a large bowl, whisk together eggs, milk, fritter spices, flour and baking powder. Squeeze kumara firmly to remove as much liquid as possible (squeeze through a tea towel to help with this) and add to fritter mix along with haloumi and onion. Season and fold together, until combined.

Cook fritters. Heat a drizzle of oil in a large fry-pan on medium heat. Use a 1/4 cup measure to scoop fritter mix into pan. Cook in batches, for 2-3 minutes each side, until golden and cooked through. Set cooked fritters aside on paper towels and cover with foil to keep warm.

Prep salsa. In a bowl, toss together all salsa ingredients with a drizzle of oil and vinegar. Season to taste.

Prep mango drizzle. In a small bowl, combine mango chilli sauce and mayonnaise. Season to taste.

Serve fritters topped with salsa and mango drizzle.
