Street Eats Beef Nasi Goreng

Ingredients

Rice

  • 1 cup brown rice
  • 1 1/2 cups water

Beef & Veggies

  • 1 pack beef mince
  • 1 Tbsp soy sauce
  • 1/2 brown onion, thinly sliced
  • 1/2 capsicum, thinly sliced
  • 1 carrot, cut in half & thinly sliced
  • 125g frozen peas
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 1 1/2 Tbsp kecap manis
  • 1 Tbsp sweet chilli sauce
  • 1/2 Tbsp soy sauce

To Serve

  • 2 eggs
  • 1/2 pack peanuts
  • Remaining kecap manis
  • Pinch of chilli flakes (optional)

Steps

  1. COOK RICE. Combine rice, water measure and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, covered, for 8 more minutes. Do not lift lid during cooking.
  2. PREP & COOK BEEF & VEGGIES. Heat a little oil in a fry-pan on high heat. Cook beef and first measure of soy sauce for 3-4 minutes, until well browned. Set beef aside in a bowl and return pan to heat with a little more oil. Cook onion, capsicum and carrot for 5 minutes, add peas and cook a further 2 minutes, until veggies are tender. Add veggies to bowl with beef and cover to keep warm.
  3. STIR-FRY RICE. Return pan to heat with a little more oil, add cooked rice, ginger, garlic, first measure of kecap manis, sweet chilli sauce and second measure of soy sauce. Cook for 3-5 minutes, until sauce is mixed through and rice is starting to crisp. Stir through beef and veggies and season to taste.
  4. COOK EGGS. Heat a little oil in a second fry-pan on medium-high heat. Crack eggs into pan, season and cook for about 4 minutes, until whites are cooked through and yolks are runny.
  5. SERVE beef and rice topped with egg, peanuts, kecap manis and chilli flakes.
