Creamy Lemon Chicken Pasta

Ingredients
Creamy Chicken
- 1 pack chicken breasts, cut into 1cm strips
- 2 cloves garlic, minced
- 1 pack pasta herbs
- 1/3 cup chicken stock
- 1/4 tsp salt
- 250g frozen peas
- 125g sour cream
- 1/2 pack baby spinach
- Juice of 1/2 lemon
- 1/4 block cheese, grated
Pasta
- 1 pack pasta
To Serve
- 1/4 block cheese, grated
Steps

BEFORE YOU START, Bring a large pot of salted water to the boil.

PREP CHICKEN. Pat chicken dry, slice into 1cm thick strips and season.

COOK PASTA. Cook pasta in pot of boiling water for about 10 minutes, until tender. Reserve 1/2 cup pasta water, drain pasta and return to pot with a little oil to prevent sticking.

COOK CHICKEN. Heat a little oil in a large fry-pan on medium-high heat. Cook chicken in pan for 3-4 minutes, until golden. Add garlic and pasta herbs and cook for a further 30 seconds, until fragrant.

FINISH CREAMY CHICKEN. Add stock and salt to pan. Bring to a simmer and cook for 2 minutes. Add peas and cook a further 2 minutes, until bright green and tender. Remove from heat and stir through sour cream, baby spinach, lemon juice and first measure of cheese. Season to taste and add a little reserved pasta water if the sauce is too thick.

SERVE pasta topped with creamy chicken and cheese.
