Vietnamese Chicken Laab with Lemongrass & Super Grains

Ingredients
SUPER GRAIN SALAD
- 1 pack super grain mix
- 1/2 capsicum, diced 1cm
- 1/2 Lebanese cucumber, halved lengthways & thinly sliced
- 1 tsp soy sauce
- 1 tsp rice vinegar
- Juice of 1/4 lemon
VIETNAMESE LAAB
- 1 pack lean ground chicken
- 1 pack lemongrass paste
- Pinch of chilli flakes (optional)
- 1/2-1 tsp fish sauce
TO SERVE
- 1 baby cos lettuce, thinly sliced
- 1/2 pack mung bean sprouts
- 1 Tbsp chopped peanuts
- 1/2 bunch coriander, chopped
- 1/2 pack habanero hot sauce (optional, see tip)
- 1/4 lemon, cut into wedges
Steps

Bring a pot of salted water to the boil.

Cook super grains. Cook super grains in pot of boiling water for about 15 minutes, until grains are tender with a slight bite. Drain, rinse under warm water and leave to drain well.

Prep capsicum & cucumber.

Cook chicken. When grains have 10 minutes cook time remaining, heat 1/2 tsp oil in a fry-pan on high heat. Cook ground chicken, lemongrass paste and chilli flakes for about 5 minutes, breaking up chicken as it cooks, until cooked through and any liquid has evaporated. Stir through fish sauce and season to taste.

Finish salad. Toss super grains with remaining super grain salad ingredients in a bowl and season to taste.

Prep garnishes.

Serve lettuce, topped with super grain salad and chicken laab. Top with mung bean sprouts, peanuts, coriander and habanero hot sauce. Squeeze over lemon.
