Crumbed Beef Steaks with Orzo Marinara & Garlic Cream

Ingredients

Orzo Marinara

  • 1 brown onion, finely diced
  • 1 carrot, grated
  • 3 Tbsp Italian spices
  • 1 3/4 cups orzo pasta
  • 1 can chopped tomatoes
  • 1 pack roasted capsicum, roughly chopped
  • 2 1/2 cups hot water
  • 1 tsp sugar (optional)
  • 1 tsp balsamic vinegar
  • 1/2 pack baby spinach, chopped

Crumbed Beef

  • 1 pack beef pave steaks
  • 1 Tbsp butter
  • Remaining Italian spices
  • 1/2 cup panko breadcrumbs
  • 2 Tbsp mayo

To Serve

  • 1 pack garlic cream

Steps

  1. Preheat oven to high grill. Prep veggies & start orzo marinara. Heat a drizzle of oil in a pot on medium heat. Cook onion and carrot for 3-4 minutes, until softened. Add first measure of Italian spices and cook, stirring, for 30 seconds, until fragrant.
  2. Cook orzo marinara. Add orzo, canned tomatoes, roasted capsicum, hot water measure, sugar and balsamic vinegar to pan with onion. Bring to a simmer and cook on lowmedium heat, stirring, for about 12 minutes. If liquid starts to dry up, add 1/4 cup of water to loosen. Remove from heat, cover and set aside to steam for 6-8 minutes, until orzo is tender. Season to taste and fold through spinach.
  3. Meanwhile, prep & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Pat beef dry and season. Cook beef for 2-3 minutes each side, for medium (depending on thickness), or until cooked to your liking. Transfer to a lined oven tray.
  4. Make crumb & grill beef. Melt butter and toss in a small bowl with remaining Italian spices and breadcrumbs. Spread mayo evenly over beef, pack crumb on top of beef and season. Grill on middle rack of oven for 1-2 minutes, until crust is golden. Rest, then thickly slice. Keep some breadcrumbs plain for fussier little foodies.
  5. Serve orzo marinara with sliced beef, garlic cream and any crumb that has fallen off the beef.
