
Italian Tomato Gnocchi with Crispy Bacon & Mozzarella

Ingredients
Gnocchi
- 1 pack streaky bacon
- 1 pack gnocchi
Sauce
- 1 brown onion, finely diced
- 3 cloves garlic, minced
- 1 pack Italian spices
- 1/2 cup chicken stock
- 1 pack roasted capsicum, sliced
- 2 tomatoes, diced 2cm
- 1 can cherry tomatoes
- 1 tsp sugar
- 1/2 pack baby spinach
To Serve
- 1 pack baby mozzarella
- 1 bunch basil, leaves picked

Preheat oven to high grill and bring a pot of salted water to the boil. Cook bacon. Place bacon on an oven tray and grill for about 5 minutes, each side, until crispy. Drain bacon on paper towels then roughly chop.

Prep & cook sauce. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion, garlic and Italian spices for 5-6 minutes, until tender. Add stock, roasted capsicum, tomatoes and canned tomatoes and bring to a simmer. Reduce to low-medium heat and simmer for about 5 minutes, until slightly reduced. Remove from heat and fold through 1/2 tsp salt, sugar and spinach.

Meanwhile, cook gnocchi. Cook gnocchi in pot of salted water for about 3 minutes, until tender and floating. Drain and add to pan with tomato sauce. Mix to combine and season to taste.

Serve gnocchi topped with crispy bacon, mozzarella and basil.
