Chicken Tagine with Couscous

Ingredients

Chicken Tagine

  • 1 chicken tagine

Couscous

  • 1 1/2 cups chicken stock
  • 1 pack couscous
  • 1/2 telegraph cucumber, diced

Steps

  1. Preheat oven to 180°C.
  2. Cook tagine. Remove plastic cover from tagine and cover with foil. Place on an oven tray and cook for 30-40 minutes, or until heated through. Stir halfway to ensure even cooking. Alternatively, spoon meal into a baking/ casserole dish and cook at 200°C for about 25 minutes, until heated through.
  3. Cook couscous & prep cucumber. Bring stock to the boil in a medium pot on high heat. Once boiling turn off heat, add couscous and 1/2 tsp salt, stir, cover and leave for 5 minutes, then fluff up grains with a fork. Fold through cucumber and drizzle with olive oil and vinegar.
  4. Serve chicken tagine on couscous.
