CHICKEN
- 275g lean chicken breasts, cut into 2cm thick strips
- 1 pack lime ponzu dressing
SESAME DRESSING
- 1/2 Tbsp sesame seeds
- 1 Tbsp soy sauce
- 1/2 Tbsp water
- 1 tsp rice wine vinegar
- 1/2 tsp finely grated ginger
- 1/4 tsp honey
- 1 Tbsp peanut butter
- 1/4 tsp sesame oil
TO SERVE
- 1/2 bunch coriander leaves, picked
- 1 spring onion, thinly sliced
Steps
-
Bring a pot of salted water to the boil.
-
Cook soba noodles & corn. Add noodles to pot of boiling water, stir to separate and cook for about 2 minutes. After 2 minutes, add corn and continue to cook for 1-2 minutes, until noodles and corn are tender. Drain, rinse under warm water and leave to drain well.
-
Prep & cook chicken. Pat chicken dry and slice into 2cm strips. Heat 1/2 tsp oil in a fry-pan on high heat until very hot. Add chicken to pan and cook for about 5 minutes, turning, until almost cooked through. Reduce heat to medium and add lime ponzu dressing to pan. Continue to cook for 1-2 minutes, until chicken is cooked through and is coated in dressing. Rest, covered and reserve resting juices.
-
Prep carrot.
-
Prep dressing. In a large bowl, whisk all sesame dressing ingredients together until combined. Season.
-
Finish noodles. Add noodles and corn to bowl with sesame dressing, along with slaw, carrot and chicken resting juices. Toss well to coat and season to taste.
-
Serve noodles topped with chicken, coriander and spring onion.
