Chicken Soba Noodles with Sesame Seed Dressing & Slaw

Ingredients

SOBA NOODLES

  • 1 bundle soba noodles
  • 1/2 cup frozen corn
  • 1/2 pack slaw
  • 1 carrot, grated

CHICKEN

  • 275g lean chicken breasts, cut into 2cm thick strips
  • 1 pack lime ponzu dressing

SESAME DRESSING

  • 1/2 Tbsp sesame seeds
  • 1 Tbsp soy sauce
  • 1/2 Tbsp water
  • 1 tsp rice wine vinegar
  • 1/2 tsp finely grated ginger
  • 1/4 tsp honey
  • 1 Tbsp peanut butter
  • 1/4 tsp sesame oil

TO SERVE

  • 1/2 bunch coriander leaves, picked
  • 1 spring onion, thinly sliced

Steps

  1. Bring a pot of salted water to the boil.
  2. Cook soba noodles & corn. Add noodles to pot of boiling water, stir to separate and cook for about 2 minutes. After 2 minutes, add corn and continue to cook for 1-2 minutes, until noodles and corn are tender. Drain, rinse under warm water and leave to drain well.
  3. Prep & cook chicken. Pat chicken dry and slice into 2cm strips. Heat 1/2 tsp oil in a fry-pan on high heat until very hot. Add chicken to pan and cook for about 5 minutes, turning, until almost cooked through. Reduce heat to medium and add lime ponzu dressing to pan. Continue to cook for 1-2 minutes, until chicken is cooked through and is coated in dressing. Rest, covered and reserve resting juices.
  4. Prep carrot.
  5. Prep dressing. In a large bowl, whisk all sesame dressing ingredients together until combined. Season.
  6. Finish noodles. Add noodles and corn to bowl with sesame dressing, along with slaw, carrot and chicken resting juices. Toss well to coat and season to taste.
  7. Serve noodles topped with chicken, coriander and spring onion.
