Italian Beef Brisket with Cream Cheese & Chive Mash

Ingredients

Mash

  • 800g potatoes, peeled & diced 2cm
  • 1/4 cup milk
  • 1/2 pack cream cheese
  • 1 bunch chives, chopped (optional, adults)

Beef

  • 1/2 red onion, finely diced
  • 2 carrots, diced 1cm
  • 1 pack Italian spices
  • 1 pack roasted capsicum, roughly chopped
  • 1 pack sous vide Italian beef brisket
  • 1 can chopped tomatoes
  • 1/2 cup hot water

Steps

  1. Prep & make mash. Place potatoes in a pot with a pinch of salt and cover with hot tap water. Cook on high heat with the lid on, for about 20 minutes, until tender. Drain and return to pot with milk. Mash until smooth, season to taste, then fold through cream cheese and chives. Cover to keep warm. Leave chives out for fussier little foodies.
  2. Prep & cook beef. Heat a drizzle of oil in a fry-pan (with a lid) on medium-high heat. Cook onion and carrots for 3-4 minutes, until starting to soften. Add Italian spices and cook stirring for about 1 minute, until fragrant.
  3. Add roasted capsicum, beef (and any sauce in pack), canned tomatoes and hot water measure to pan with onion and carrot and bring to a simmer. Reduce heat to low-medium and simmer, covered with a lid for 12-15 minutes, until beef is hot through and sauce has thickened.
  4. Finish beef. When beef is tender, use two forks to separate meat into bite-sized pieces while in pan. Season to taste.
  5. Serve mash topped with beef and sauce.
