Beef Eye Fillet with Yam Frittes & Truffle Hollandaise

Ingredients
Yams
- 400g yams, cut into frites (skinny fries)
Beef
- 1 pack beef eye fillet
Greens
- 1 pack green beans, ends trimmed
- 1 courgette, cut into 1cm batons
- 1/2 bunch basil
To Serve
- 1 pack truffle Hollandaise

Preheat oven to 220°C. Prep & cook yams. Toss yams on a lined oven tray with a drizzle of oil. Season and roast in oven for 25 minutes, until tender and golden. Turn once during cooking.

Cook beef. Pat beef dry and season. When yams have about 15 minutes cook time remaining, cook beef. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook beef for 4-5 minutes each side, for medium-rare, or until cooked to your liking. Rest beef, covered, for 5 minutes before slicing thinly against the grain. Reserve pan.

Prep & cook greens. Wipe reserved pan clean and return to medium heat with a drizzle of oil and a knob of butter. Cook beans and courgette for 3-4 minutes, until tender. Remove from heat and stir through basil. Season to taste.

Serve yam frites, greens and beef topped with truffle Hollandaise.
