Mexican Beef Loaded Kumara Wedges with Chipotle

Ingredients
Kumara
- 400g kumara, cut into wedges
Mexican Beef
- 1 carrot, grated
- 1 pack beef mince
- 1 pack Mexican spices
- 2 Tbsp tomato paste
- 1/2 pack chipotle sauce
- 3/4 cup beef stock
Salad
- 1/2 cup frozen corn
- 1 lettuce, shredded
- Remaining chipotle sauce
- 1 tsp mayo
To Serve
- 1/4 cup grated cheese
- 2 Tbsp sour cream
- 1 pack garlic chilli blend

Preheat oven to 220°C. Bring a medium pot of salted water to the boil. Prep & cook kumara. Toss kumara on a lined oven tray with a drizzle of oil. Season and roast for 20-25 minutes, until tender. Turn once during cooking.

Prep carrot & cook beef. Heat a drizzle of oil in a fry-pan on high heat. Cook beef for about 4 minutes, until browned. Add carrot, Mexican spices and 1/2 tsp salt to pan and cook for 2 minutes, until fragrant.

Add tomato paste, first measure of chipotle sauce and stock to pan and cook for about 2 minutes, until sauce has reduced and thickened slightly. Season to taste.

Make salad. Add corn to pot of boiling water and cook for about 3 minutes, until tender. Drain and place in a large bowl with remaining salad ingredients. Toss and season to taste.

Serve kumara topped with Mexican beef, cheese, sour cream and a pinch of garlic chilli blend. Serve salad on the side.
