Spanish Turkey Kofta with Pepitas & Romesco

Ingredients
KOFTA
- 1 pack lean ground turkey
- 1 pack turkey spices
- 1 pack skewers
COUSCOUS
- 1 pack wholemeal couscous
- 3/4 cup boiling water
- 1/2 telegraph cucumber, finely diced
- 1/2 punnet cherry tomatoes, halved
- 1 carrot, peeled into ribbons
- 1/2 pack baby spinach
- 2 tsp vinegar
ROMESCO DRIZZLE
- 1 pack romesco
- 150g yoghurt
TO SERVE
- 1 pack pepitas

Bring a half full kettle to the boil.

Prep kofta. Combine turkey and turkey spices in a bowl with 1/2 tsp salt and roll into 8 balls. Roll into sausages and thread onto skewers. Set aside on a plate to firm up.

Cook couscous. Combine couscous, boiling water measure and 1/2 tsp salt in a heat-proof bowl and cover. Leave to steam for 5 minutes. Fluff up grains with a fork.

Cook kofta. Heat 2 tsp oil in a fry-pan on medium heat. Cook turkey kofta for 8-10 minutes, turning often, until golden and brown. Rest, covered for 3-4 minutes.

Prep couscous vegetables. Toss all couscous ingredients together in a bowl and season to taste.

Make romesco drizzle. In a small bowl, mix together romesco and yoghurt and season.

Serve couscous topped with kofta, romesco drizzle and pepitas.
