
Italian Beef with Spring Gnocchi & Mozzarella

Ingredients
Beef
- 1 pack beef mince
- 1 pack onion & garlic paste
- 1 pack tomato basil sauce
Gnocchi
- 1 broccoli, finely diced
- 1 pack baby spinach, roughly chopped
- 1/2 pack gnocchi
To Serve
- 1 pack mozzarella balls
- 1 bunch basil, leaves picked

Before you start, bring a medium pot of salted water to the boil (using hot tap, with the lid on).

Cook beef. Heat a drizzle of oil in a pan on medium-high heat. Cook beef, breaking up with a spoon for about 7 minutes, until browned. Add onion and garlic paste and cook, stirring, for a further minute. Stir through tomato basil sauce and simmer for 2-3 minutes. Season.

Meanwhile, prep veggies.

Cook gnocchi. Cook gnocchi in pot of boiling water for about 3 minutes, or until tender. Drain and set aside. Return pot to medium heat with a knob of butter and a drizzle of olive oil. Add broccoli and cook for 2 minutes, until tender. Remove from heat and add cooked gnocchi and spinach. Stir and season.

Serve gnocchi topped with beef, mozzarella and basil.
