Almond Fish with Avocado Sauce

Ingredients

Kumara

  • 150g kumara, diced
  • 1 pack kumara spices

Fish

  • 1 pack market fish
  • 2 tsp mayo
  • 2 tsp sliced almonds

Pea Smash

  • 1/2 cup frozen peas
  • 1/2 pack baby spinach, roughly chopped
  • 30g feta cheese, crumbled

To Serve

  • 1 pack avocado sauce

Steps

  1. Preheat oven to 220°C. Prep & cook kumara. Toss kumara and kumara spices on a lined tray with a drizzle of oil. Roast for about 25 minutes, until tender and golden.
  2. Prep fish. Pat fish dry and remove any remaining scales or bones. Place on a lined tray, season and spread mayo evenly over the top of the fish.
  3. Bring a pot of salted water to the boil & prep veggies. Add peas to water and cook for about 2 minutes, until bright green and tender. Drain and return to pot along with spinach. Roughly smash then fold through feta cheese. Season to taste.
  4. Cook fish. Top fish with almonds and bake, on rack above kumara, for 6-7 minutes, until fish is just cooked through and almonds are golden.
  5. Serve kumara topped with fish, pea smash and avocado sauce.
