Greek Lamb Steaks with Warm Orzo & Feta

Ingredients
Lamb
- 1 pack lamb rump steaks
- 1 pack Greek herbs
Orzo
- 1 pack orzo
- 1 pack green beans, cut in half
- 1 pack baby spinach, chopped
- 1 pack olives, chopped
To Serve
- 1 pack tzatziki
- 1 pack feta cheese, crumbled
- 1 pack mint

Before you start, bring a pot of salted water to the boil (using hot tap, with the lid on).

Cook lamb Heat a drizzle of oil in a medium fry-pan on medium-high heat. Pat lamb dry, toss with Greek herbs and season. Cook for 3-4 minutes each side (for medium), or until cooked to your liking. Remove from pan and cover to rest, then slice.

Meanwhile, cook orzo As soon as water boils, cook orzo for about 10 minutes, until just tender. Prep green beans. When orzo has 2 minutes cook time remaining, add beans to pot. Drain well and toss with a drizzle of olive oil to prevent sticking.

Prep spinach & olives & finish orzo Toss spinach, olives, orzo and beans together with a drizzle of vinegar and season.

Serve orzo topped with lamb, tzatziki, feta and mint.
