Ingredients
Lasagne
- 1 brown onion
- 2 carrots
- 1 pack beef mince
- 1 pack lasagne spices
- 1 pack tomato paste
- 1 can chopped tomatoes
- 1/2 cup hot water
- 1/3 pack baby spinach
Cheese Sauce
- 2 Tbsp butter
- 2 Tbsp GF flour
- 1 cup milk
- 1/4 block cheese, grated
To Assemble
- 1 pack lasagne sheets
- 1/4 block cheese, grated

Start lasagne Preheat oven to 200°C. Finely dice onion and grate carrots. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and carrot for about 3 minutes. Add beef and cook, stirring, for 4 minutes.

Add spices and tomato paste Add lasagne spices and tomato paste and cook, stirring, for about 1 minute, until fragrant. Stir in canned tomatoes, hot water measure, a splash of soy sauce and balsamic vinegar and leave to simmer on medium heat for 6-8 minutes, until thickened. Fold through spinach and season to taste.

Make cheese sauce Melt butter in a pot on medium heat. Whisk in flour and cook, stirring, for about 2 minutes, until sauce turns a sandy colour. Add milk in thirds, whisking, until smooth. Cook for 2-3 minutes, whisking, until sauce has thickened. Remove from heat, add first measure of cheese, season and stir until smooth.

Build lasagne In a baking dish (approx. 20 x 28cm), spread a quarter of the lasagne mix to cover base. Lay lasagne sheets in a single layer to cover the mix, cutting to fit if needed. Spoon over another quarter of the lasagne mix. Repeat with remaining pasta sheets and lasagne mix, finishing with lasagne mix.

Bake lasagne Pour cheese sauce over lasagne, sprinkle with second measure of cheese and bake for 25-30 minutes, until cheese is golden and pasta is tender. Remove from oven and rest for a few minutes before serving.

Serve lasagne topped with some freshly cracked black pepper for adults.
