Ingredients
Stir-Fry
- 1 pack seed mix
- 1 Tbsp soy sauce
- 2 cloves garlic
- 1/2 pack broccolini
- 1 baby bok choy
- 1 pack oyster mushrooms
- 1/2 pack soba noodles
- 1 1/2 cups edamame beans
- 3 Tbsp sesame dressing
To Serve
- Sesame dressing (optional)
Steps
-
Toast seeds Bring a pot of salted, hot tap water to the boil with a lid on. Heat a drizzle of oil in a fry-pan on medium heat. Add seed mix to fry-pan and toast for 2-3 minutes, stirring often, until golden. Remove from heat, add soy sauce and stir quickly, until seeds are coated. Remove from pan and set aside to cool.
-
Prep veggies Thinly slice garlic; cut broccolini into small florets; thinly slice bok choy; roughly tear oyster mushrooms.
-
Cook noodles Cook noodles in pot of boiling water for 2-3 minutes, until tender. Drain well, and drizzle with sesame oil to prevent sticking.
-
Cook veggies Wipe pan clean and heat a drizzle of oil in a fry-pan on medium-high heat. Cook mushrooms for 2-3 minutes, until golden. Add to pot with drained noodles. Return pan to heat and cook garlic and broccolini for about 4 minutes, until tender and charred. Add bok choy and edamame and cook a further 2 minutes, until heated through.
-
Add noodles, mushrooms and first measure of sesame dressing to pan with vegetables and toss. Season to taste with soy sauce.
-
Serve soba noodles with remaining sesame dressing and toasted seeds.
