Sesame Miso Salmon with Fried Rice

Ingredients
Rice
- 1 broccoli, roughly chopped
- 1 spring onion, thinly sliced
- 1 courgette, cut in half lengthways and sliced
- 1 pack frozen corn
- 2 packs rice
- 1 pack garlic and ginger paste
- Juice of 1 lemon
Salmon
- 2 packs salmon fillet
- 1 pack honey soy glaze
- 1 pack sesame seeds
To Serve
- 1 pack miso drizzle

Before you start, preheat oven to conventional bake 220°C.

Prep broccoli, spring onion & courgette.

Prep & cook salmon Pat salmon dry and cut into 4-5 pieces. Place on a lined oven tray, spread with honey soy glaze and sprinkle with sesame seeds. Bake (on middle rack) for 6-8 minutes (depending on thickness), for mediumrare, or until cooked to your liking.

Cook veggies & rice Heat a drizzle of oil in a fry-pan on high heat. Stir-fry broccoli, courgette and corn for 2 minutes. Squeeze rice in packs to separate grains. Reduce heat to medium, add a drizzle more oil and rice to pan, along with garlic and ginger paste and cook for 3 minutes, stirring regularly, until hot through and fragrant. Stir through lemon juice and spring onion and season to taste with soy sauce.

Serve rice with salmon and top with miso drizzle.
