Beef Mince and Cheese Pie

Ingredients

Pie

  • 1 brown onion
  • 2 stalks celery
  • 1 carrot
  • 1 pack beef mince
  • 1 pack pie spices
  • 1 pack pie sauce
  • 1 1/4 cups hot water
  • 1/2 pack grated 3 cheese mix

Pastry

  • 1 pack flaky puff pastry

Peas

  • 250g frozen peas

To Serve

  • Tomato sauce

Steps

  1. Prep veggies Preheat oven to 200°C. Bring a pot of salted water to the boil. Finely dice onion, celery and carrot.
  2. Prep pastry Cut pastry into 8 pieces, place on a lined oven tray. Bake for 10-12 minutes, or until puffed and golden. Check regularly to avoid burning. Once pastry has been removed from the oven, switch oven to high grill.
  3. Start pie Heat a drizzle of oil in a large oven-proof fry-pan on medium-high heat. Cook onion, celery and carrot for about 4 minutes, until starting to soften. Increase heat to high, add beef and cook stirring for 4-5 minutes, until browned. Add pie spices and cook, stirring, for 30 seconds.
  4. Finish pie Add pie sauce and hot water measure to beef and bring to a simmer. Simmer for 3-5 minutes, or until sauce has thickened. Season to taste and sprinkle with cheese. Place on middle-upper oven to grill rack for 3-4 minutes, until cheese has melted.
  5. Cook peas Add peas to pot of boiling water and cook for 3-4 minutes, until tender. Drain well, then toss with a knob of butter and season to taste.
  6. Serve mince topped with pastry, peas and tomato sauce on the side.
